Yield 8 small pancakes
Ingredients:
1 Tablespoon psyllium husk powder ( I use this )
1/2 teaspoon baking soda
1//2 teaspoon fine sea salt
3 large eggs
1 Tablespoon melted butter
1 teaspoon apple cider vinegar
Clarified butter, oil, or fat for cooking
Procedure:
Preheat a griddle or cast-iron skillet to medium high heat.
In a small bowl mix together psyllium husk powder, baking soda and sea salt.
In a mixing bowl beat eggs until frothy, mix in melted butter and apple cider vinegar
Pour the dry ingredients into the wet ingredients and mix until fully combined.
Grease the griddle or pan with the clarified butter or oil.
To make the pancakes spread about one Tablespoon of batter at a time onto the heated griddle.
Cook until small bubbles begin to form on the surface and the edges look firm.
Flip the pancake and cook until the other side is set and the pancakes are cooked through completely.
Place cooked pancakes on a warm platter as you work.
Yield approximately 8 small pancakes
Serve with crème fraiche or sour cream and caviar, salmon roe or smoked salmon. Garnish with fresh dill or chives.
